Adventures in cooking: Frittata with fresh spinach, chopped mushrooms and sliced potatoes, cooked turkey bacon and shredded reduced fat mozzarella
Whenever I work from home, I tend to get caught up in work and forget about breakfast. Today I wanted to make something for brunch that I hadn’t before and a frittata came to mind. I already had all these ingredients, so it was just a matter of throwing everything in a pie pan and baking.
I used six eggs and poured in a little skim milk to make it a bit fluffier. After making sure all the ingredients are covered, pour it in a pie pan and cook on 375 F for 30 minutes. In the last five minutes, sprinkle it with the shredded cheese. Let it cool so it hardens a bit, and you’re ready to impress.
Consider whipping one of these up if you have guests staying with you for the holidays! It’s a level above the standard eggs and bacon breakfast and can serve many hungry people.

DIY - Wine Bottle Vases

As soon as I get something to call a home of my own, I’m putting these crafty DIY wine bottle vases up in my kitchen. I adore the painted frame around them like the one seen below, and for those that have a kitchen table on the small side, they leave you free of a space-stealing centerpiece.

However, these really would work in just about any room — even the bathroom.

The total cost for one of the vases is about $5 (not including the wine, but I’m sure I could find a way to enjoy emptying the bottle).

Here’s what you need (per vase):

— 1 empty wine bottle of your choice
— 1 top plate connector/ceiling flanges (3/8″ size)
— 1 1″ split ring hanger
— 2 screws to fit and hold the top plate connector (you may also want drywall anchors if you are not mounting directly into studs or another material)
— 1 piece of 3/8″ threaded rod, cut into 2 1/2″ pieces
— 1/2″ double sided foam mounting tape (optional – if your bottle’s neck is smaller than 1″)
— Silk flowers of your choice
