Adventures in cooking microwaving: Amy’s Tofu Scramble (tofu scrambled with vegetables and hash browned potatoes — all organic)
I had this for breakfast this morning and it was hands down delicious. It took only four minutes in the microwave for a healthy, all organic and filling breakfast.
The tofu is scrambled with spinach, mushrooms, zucchini and carrots and the hash browns (made of organic potatoes) were a great side addition. Who doesn’t love hash browns?
