permalink Adventures in cooking: Two eggs scrambled with spinach and feta topped with salt, pepper and crushed red pepper flakes with strawberries
Inspired by Nutritionista! I slightly altered her breakfast — used feta instead of goat cheese and I left out the meat — but I loved her addition of red pepper flakes. I would have never thought to add that, but it certainly spices up the breakfast.
Happy Friday!

permalink Adventures in cooking: Black Bean Brownies
When I first saw this recipe on reallykatie’s blog, I knew I had to try them. Low-cal brownies packed with fiber and protein? Sign me up.
I was apprehensive as to what they would taste like in the end, but I loved the fudgy, rich flavor! You really cannot taste any hint of beans.
I planned on bringing them to a party and thought if I told people what was really in them, it might scare them off. So I promised I would only reveal the secret ingredient after the daring brownie-eaters took their first bite.
No one believed they were made with black beans! I think I may make them this way from now on.
Ingredients:
— 1 15 oz. can black beans (I used organic)— 1 box brownie mix
Directions:
1. Drain beans and rinse well (you can do this in the can). Put beans in can and fill with water.2. Put beans and water in blender until liquid with a few brown flecks.3. Mix liquid with brownie mix. Do NOT add oil or eggs.4. Cook according to box and enjoy!

permalink Adventures in cooking microwaving: Amy’s Tofu Scramble (tofu scrambled with vegetables and hash browned potatoes — all organic)
I had this for breakfast this morning and it was hands down delicious. It took only four minutes in the microwave for a healthy, all organic and filling breakfast.
The tofu is scrambled with spinach, mushrooms, zucchini and carrots and the hash browns (made of organic potatoes) were a great side addition. Who doesn’t love hash browns?
At only 320 calories and 15 grams of carbs, it was a great way to start the day — but it’s not limited to breakfast only. It would even make a great, quick lunch! View the complete nutritional info on the Amy’s Web site.

permalink Adventures in cooking: Turkey burger with cheddar slice on a whole wheat bun, sweet potato fries and sugar snap peas
I bought two sweet potatoes at the grocery store yesterday specifically to make sweet potato fries. Did you know they have three times the nutritional value as regular potatoes?
The recipe I used suggested pumpkin pie spice and chili spice, but I used seasoned salt, garlic salt and chili powder instead.
Try swapping something salty for something sweet by coating them in brown sugar and cinnamon before baking.
Mmmmm.

permalink Adventures in cooking: Amy’s spinach pizza, (and by cooking, I mean throwing it in the oven for 15 minutes on 425°)

I heard about the Amy’s brand from Nutritionista and decided to try out one of their natural/organic products for myself.

The crust on this spinach pizza is made from organic wheat flour and extra virgin olive oil, the sauce is made from organic tomatoes and the topping is a blend of organic spinach with feta and part-skim mozzarella.

Just a few slices are both delicious and filling. I’m excited to try more Amy’s products!
